Does the dasher turn in an ice cream maker?

A: Yes, it is perfectlly normal and, in fact, is necessary for proper operation of the ice cream maker. As the ice cream freezes on the inside of the can, the paddle (or dasher) scrapes it off the can allowing more liquid to contact the can and freeze.

Why do you need rock salt for ice cream?

Adding salt lowers the freezing temperature of the water and for wintery roads, it means that the water won’t freeze as easily. For our ice cream, it allows the temperature of the mixture around the ice cream to get colder. Rock salt isn’t processed as much as table salt, and is much chunkier.

How does a homemade ice cream maker work?

A high-speed electric motor, geared at approximately 75RPM, drives a mechanism that simultaneously rotates the canister, counter-rotates the scraper, and holds the churn paddles stationary. As the canister turns, the ice cream mixture freezes against the inner wall of the canister.

How do you use rock salt in ice cream maker?

Sprinkle about 1/4 cup rock salt over the crushed ice. Continue layering crushed ice and rock salt until the ice level reaches the top of the rotating ice cream canister. Wait about 20 to 40 minutes for the ice cream maker to stop churning.
