What Jimador means?
A jimador is a type of farmer who harvests agave plants, which are harvested primarily for the production of mezcal, sotol and tequila. Unripe agave can have a bitter or overly sweet taste, ruining the distilled spirits made from them. The primary tool of a jimador is the coa de jima or simply coa.
How does a Jimador work?
The jimador uses it to first remove the agave flower, which causes the agave piña (heart) to inflate. Then, this is harvested and with the hoe the outer leaves of the plant are chopped leaving only the soft center that is chopped and cooked to handcraft the tequila.
How is Mezcal different from tequila?
Tequila is typically produced by steaming the agave inside industrial ovens before being distilled two or three times in copper pots. Mezcal, on the other hand, is cooked inside earthen pits that are lined with lava rocks and filled with wood and charcoal before being distilled in clay pots.
What is El Jimador made of?
el Jimador Reposado is made with 100% hand-harvested Blue Weber agave, naturally fermented and double-distilled. Then it rests for two months in our own handmade American oak barrels. It has a moderately smoky flavor with lingering hint of caramel.
