This is to ensure the integrity of the modelling paste remains in the best possible condition for consumption.

If you’ve made finished fondant shapes or flowers and wish to store them once dried, wrap them gently in kitchen paper and keep in a covered tin, box or airtight container somewhere cool and dry away from direct sunlight. Don’t store your sugarpaste decorations in the fridge as they will absorb moisture and go soft.

The safest option for using greenery to decorate cakes is to go with ones that you know are edible. For example, by using herbs. Thyme is delicate and citrusy, so works great on cakes in the summer. Rosemary is more robust with a lovely deep green colour which works particularly well on cakes in the winter.
