Since the probes are technically interchangeable, and many can be purchased separately, we were curious about whether the brains in the base unit or the quality of the probes was more responsible for a thermometer being accurate and precise.

Probe thermometers consist of a thin metal rod (a probe), that’s connected by a wire to a digital display. The probe is inserted into the meat and stays there throughout cooking; the display unit sits outside the oven and sounds an alarm when the preset temperature is reached.

This can sometimes be fixed by baking the probe in an oven at 250°F (120°C) for 10-15 minutes, as this will evaporate out moisture that may be trapped in the probe. Make sure you are only putting the probe+wire in the oven, not the jack or transmitter.

Even if you’re using a low heat of 250°F, the coals will be much hotter. If your cable comes close to those coals, or to a flame, you will burnout the interior probe insulation and short the probe. If the receiver and/or the transmitter of your Maverick thermometer displays LLL or HHH instead of the probe temperature, wait for the probe to reach room temperature. If LLL or HHH is still displayed or you get a false temperature, squeeze the probe jacks harder into the transmitter and twist them back and forth so they make good contact.
